How to Duck Prosciutto

Lombardo’s Ristorante has been one of the premier restaurants in Buffalo for decades. They have a lot of great things going on including Wine Paring Diners, Friday lunch and mouth-watering Pizza-to-go for only $9.

Make Duck Prosciutto @ Home:

Ingredients:

  • 2 cups kosher salt
  • 1 Duck Breast (Split in half)
  • 2 Teaspoon of toasted juniper berries
  • 2 Tablespoon fresh picked Thyme
  • Cheese cloth
  • Twine

 

How To:

  1. Mix spices & herbs in a bowl with salt
  2. Using a square non-reactive glass or hard plastic container, pack breast in salt
  3. Cover and refrigerate overnight
  4. Let rest for 24 hours
  5. Rub & rinse salt off breast
  6. Wrap in cheese cloth
  7. Tie with twine, like a package
  8. Hang in fridge for 7 days
  9. Thinly slice using a very sharp knife
  10. Eat!

Come join us for the Craft beer, Music, and Camping festival of the year!  We are bringing in more than 60 brewers to offer you more than 100 beers to taste. You will be able to meet some of the top brewers in the USA and enjoy a night of music, fireworks and more. Upon entering we will provide you with a tasting glass and wrist band upon that signals to the brewers that you are there to enjoy their brews. After checking in you will be free to set up camp, begin your sampling, enjoy the music, entertainment, and party your way through the evening at the beer festival of the year!

A two day overnight festival (Friday, July 3rd – Sunday, July 5th), you come in a day early at 12pm on Friday. From 6-9pm you will be offered an opportunity to meet the brewers, who have included special brews prepared just for you to enjoy at The Hollandstock Festival
