Erbert & Gerbert’s is taking over the space that was once occupied by Bistro Europa on Elmwood. A sandwich shop “dedicated to serving better, more flavorful sandwiches than anyone else in the universe,” according to their website.  Founded originally in Eau Claire, WI, some 20 years ago they now have over 50 shops across the states.

Word on the street is they are similar to a Subway only better. They go big for cute sandwich names and seem very fond of Hellman’ mayo – see below. Base sandwiches are in the $5-$6 range.

The inside, or “guts” if you will, is removed from the top half of the sandwich bread and “to create a superbly balanced sandwich. It’s then served to the customer as a form of dipping bread for soup, etc. Kinda cool.Erbert & Gerbert's

Quatr – Cranberry Wasabi, Chicken Breast, Cucumber, Hellmann’s® Mayo, Lettuce, Cheddar Cheese and Cherrywood Smoked Bacon Erupter – Buffalo Chicken Salad mixed with Celery, topped with Lettuce, Tomato, Hellmann’s Mayo®, Onion and Bleu Cheese Dressing.

Flash – Capicola, Salami, Ham, Provolone Cheese, Oregano, Mayo, Lettuce, Tomato, Onion, Oil & Vinegar Dressing.

Girf –  Turkey Breast, Ham, Provolone Cheese, Tomato, Lettuce and Hellmann’s® Mayo.

Jacob Bluefinger – Double Provolone Cheese, Tomato, Lettuce, Hellmann’s® Mayo, and Avocado.

Some of the extra options, for a price, include peppers, extra meat, cheese, pickles etc.

They also offer cookies, their own brand of chips/snacks, and chili/soups.
