
Juicy Burger / Step Out Buffalo
Andrew Murtha is a self-proclaimed burger fanatic and he thinks Hamburg, “Birthplace of the Burger” deserves a great burger joint. We couldn’t agree more, and it looks like they’re going to get just that starting … (drum roll please) the day of Hamburg’s 30th Annual Burgerfest celebration – Saturday, July 18.
As you may have read here Chef Andrew was most recently Executive Chef at well renowned Tempo Restaurant in Buffalo. A 1999 graduate of Hamburg High he spent some time at Steven Starr’s Barclay Prime, one of Philadelphia’s premier steakhouses. From there he returned to WNY and helped open the critically acclaimed Brick Oven Bistro & Deli in South Buffalo. He took over management of Hamburg Hospitality Group, that includes Juicy (formerly Bistro in the Square), Buffalo Street Grill (61 Buffalo Street, Hamburg) and Buffalo Sports Grill (4923 Southwestern Boulevard, Hamburg), earlier this month.

Murtha says, “A lot of people wonder why I left Tempo to open a burger joint, and I guess the answer is that I wanted to eat a great burger.”
Murtha plans to keep the place simple with some pop art, a 50’s era motif, a perfect burger and a few other Buffalo favorites (see menu). Included under Buffalo favorites is an excellent beer list and finely crafted cocktails. Joining the staff will be former August Bistro bartender Evan Granville. Among the menu options we are drooling to check out are the house-made wing sauce, the house-made mozzarella (sticks) and the house smoked heritage bacon that pops up on a few menu items.
What goes in to a perfect burger you ask?
Chef Andrew says “A perfect burger is a work of art. The bun has to be on point, and toasted to golden brown with the flavor of butter. The beef has to be rich and strong, yet submit to the slightest bite, the cheese deep and melted at the right time. The pickles have to bring the acid to the palate, yet be balanced with that slight sweetness. The lettuce and onions are fresh, and offer a contrast in texture. The fries have to be hot and crispy, with fresh cracked pepper and the right amount of salt. So much can go wrong, but when everything goes right one may just achieve perfect bliss.”
Not to mention beef. These burgers are a combo grind of NY Strip, Short Rib and Chuck steak. It is all high quality, grass feed and hormone free meat. In addition to their “Signature” burger they offer another 8 options like:
“GRILLED-CHEESE-BURGER” | sourdough provolone & cheddar grilled cheese bun, tomato $11
THIS AIN’T NO YOLK | cheddar, smoked bacon, farm fresh egg $12
BIG POPPA | stuffed banana pepper, provolone, grilled tomato $12
Juicy will be open for lunch and dinner Tuesday through Thursday from 11:00 am until 9:00 pm, Fri & Sat. until 10. If you’re as anxious to dig in as we are, say opening day, expect plenty of company. Hamburgers love a great burger.
