
There’s a new elevated cocktail lounge located in the heart of Springville and it’s called The Mullet.
When you hear the origin story, the name makes so much sense. As the name suggests, the concept here is just like the haircut.
“It’s a cocktail lounge behind a coffee shop. It’s literally business in the front, and party in the back!” Lindsay Buncy says.
Before deciding to open their first business, Kevin and Lindsay Buncy talked about ways to maximize revenue within a single building. They came up with the idea of a coffee shop in the front and a bar in the back.

However, creating this dual-purpose space took a backseat as Kevin and Lindsay opened their first business location, 49 Coffee House & Eatery in Springville.
When they opened their doors in 2018, business was strictly dedicated to the coffee shop which quickly became the place for locals to get their daily dose of caffeine in Springville. In 2020 they continued their coffee trajectory and opened their second shop in Arcade.
For years, their original coffee and cocktails concept remained a dream “in the works,” until they decided to take the leap and make it happen.
In October of 2022, the husband-and-wife duo opened The Mullet, inside the very same building where there business began at their Springville coffee shop.
“We wanted to add to our community by creating a space that didn’t already exist in Springville. We created an environment that we enjoyed and thought others would too,” Lindsay says.

The Mullet’s food menu features shareable plates, including flatbreads, house made hummus, and charcuterie. One of the menu highlights is the most popular panini from 49 Coffee House – The Jake&thefatman Panini, which is topped with pulled pork, house made mac-n-cheese, dill pickle, and BBQ sauce.
When it comes to drinks, this place really offers a little bit of everything, including social drinks, craft beer, wine, and mocktails. But, the main focus at The Mullet is their handcrafted cocktails. They serve tried-and-true classics like Manhattans and Espresso Martinis as well as their own unique cocktail creations.
Plus, they feature a new drink every Thursday called New Kid On The Rocks and it’s garnished with rock candy (which is much more fun to stir with).
When you visit The Mullet, you can expect a warm atmosphere that’s comfortable, yet upscale complete with chill music and creative interior design. You can play pool and Pac-Man here and purchase bulk candy by the ounce.



It’s the perfect spot to meet up with friends for girls night out, spend date night with your significant other, or grab a seat at the bar and enjoy a drink by yourself. As soon as the weather gets nicer, they will be opening up a patio.
With the addition of The Mullet to 49 Coffee House & Eatery, the couple is excited to see how this concept will further impact the Springville community.
“Successful small businesses attract new businesses which we need in order to have a prosperous community. If we support local we do our part in providing opportunities for current and future residents,” Lindsay says.
The Mullet is currently open Thursday, Friday, and Saturday nights. During off hours, the space doubles as an event space and overflow seating for the coffee shop.
Pro Tip: If you’re coming for cocktails, enter at the side door in the back!
