Owner of Cake Crazy Bakery and Crazy Good Eatz, Shetice Jackson is a one-woman tour de force.

Jackson earned her culinary degree at the Culinary Institute of America, and spent years working in kitchens around the United States, including an Emeril Lagasse restaurant in Las Vegas and the former City Grill on Pearl Street.

One of her most important and influential jobs was as the head chef at the Campus House on the Buff State campus. In addition to being a proper sit-down restaurant for faculty and staff, Campus House is also a place where Buff State students can learn about the hospitality industry.

“While at Buff State, I fell in love with baking, even though I’d never really had a job baking at all,” Jackson says. “I was just learning how to bake, and I made a cake for my mother. She really liked it, even though it was terrible looking and I didn’t really know what I was doing. She was so happy when she saw this cake. She almost cried, and I will never in my life forget the happy look on her face.”

That experience and a growing obsession with baking led Jackson to start posting all her creations on social media, where her reputation as a baker exploded. Ultimately, she decided to quit her job at Buff State and open Cake Crazy Bakery.

“I had worked in 14 restaurants, but no bakeries,” Jackson says. “But I knew all about food costs and customer service. I’m also very particular about the details. So when I opened, my staff had to show me how to use the big mixers and stuff like that. It was crazy! So I tell everybody, you really can do anything you put your mind to.”

The success of the bakery has now led to the opening of Crazy Good Eatz — a savory sibling restaurant. On our weekday visit, the place was bustling like any good lunch spot should be. The heavy traffic is also a testament to the quality of the food. You can taste the years of diverse, professional culinary experience in each bite. The chicken gumbo we tried could go toe-to-toe with any Cajun gumbo in Louisiana. Our short rib sandwich was as decadent as you’d expect but the welcome addition of pickled red onions gave it a smart balance.

In addition to being a restaurant serving killer comfort food, Crazy Good Eatz is also a supportive place for people looking to realize their own culinary dreams. Flexing her background in education, Jackson takes it upon herself to coach and mentor employees who show an interest in running a restaurant.

“My team means so much to me,” she says. “These young men and women, me teaching them is everything. If they stick with me for a couple years, they’ll be able to work in any kitchen.

“One of my line cooks, she wants to open her own restaurant. I told her she’s got three years and then I’m kicking her out. I’ll grab her and say, this is why we do this and this. Because I know she wants to own her own spot.”
