New: Get Your Hands on Spicy, Tangy Nashville Hot Chicken at Hen House on Hertel

When Hen House moved into The Dome in Tonawanda a little over one year ago, it seemed like a bit of a gamble. At the time, Hen House had only been a food trailer slinging its version of Nashville hot chicken. Would this on-trend restaurant concept work inside a local Tonawanda bar where time seems to disappear?

From the perspective of Sal Andolina, co-owner and head chef at Hen House, that gamble paid off big time. In fact, the restaurant recently parlayed that success into the opening of a new stand-alone location on Hertel Avenue in North Buffalo.

“Moving into The Dome was a good step for us,” Sal says. “We went from having a little trailer to being in a physical building. Over the past two years, we’ve built up a pretty big customer base.”

The new Hen House location has largely the same menu as the location at The Dome. There are a number of different sandwiches and wraps featuring Hen House’s signature hot chicken. We found the Hot Hen sandwich perfectly married the spicy tang of spicy chicken with the tang of pickles and creaminess of coleslaw. We also found The Mac Wrap – filled with chopped chicken, mac-n-cheese, cheese, bacon and jalapenos — was a meal in every bite, and a stoner’s dream. Sal says the new location will have some special sandwiches that get rolled out occasionally, but you should expect the menu to mostly remain the same. There are also plans to expand into late-night hours on Fridays and Saturdays.

With slick branding that’s on-point and a bright clean space, the new Hen House location tips the hands of the owners: These guys are thinking about building a chain that starts locally and possibly goes beyond. Currently, there are three locations: the new Hertel Avenue location, the location inside The Dome, and a semi-permanent food trailer at Briar Brothers Brewing in the Old First Ward.  

“It all comes down to people and processes,” says Sal, when asked about managing multiple locations. “We focus on hiring quality people, and we’re also very thorough in developing our recipes and processes. Me and my two partners regularly go around to both locations and the food truck. Almost every day, I’m stopping in all three locations, keeping an eye on things and making sure everybody’s doing the same thing.”

Sal added that the Hen House location at The Dome “should be there for another year” but he implied that his restaurant may move on at some point in the near future.

“When we agreed to move into The Dome, we knew it would be a semi-permanent thing,” he says. “We didn’t know how long we were going to be there, and the goal was to expand beyond there.”
