Pizza Journal: SOB visited Pi Craft in December soon after it opened, so we are familiar with the Pizza style “Chipotle concept.” Like Crust Pizza Bar, the idea is creating your own pizza as you walk down the line, picking fresh ingredients as toppings. It’s highly customizable, but regrettably I had to stick to the plan once again – cheese and pepperoni. Hey, the 28 Days of Pizza is about comparing the classic ingredients, at the core of WNY Pizza. The crust is prepared/charred ahead of time. Then you add your chosen ingredients and they bake it up right there while you wait for a few minutes. This pizza was seriously good. I wondered if it would be able to compare, and it does. The crust is very good – nice and fluffy & super thin on the bottom. The red sauce was tasty, the mozzarella fresh. The pepperoni was the best of the 30 days. I saw them take it off the pepperoni stick. Each slice was thick, large and delicious. It’s a game changer. The sad thing is, I bet plenty of people bypass the pepperoni for all of the other fun toppings. I’m telling you right now that is a big mistake. GET THE PEPPERONI! The pesto topping they put on top made the pizza even better, mixing a subtle hint of seasoning/herbs with the other flavors. (Full disclosure – I chose to add that as a topping. I’m not sure if that’s within the guidelines – it is now – of this competition or not but damn I’m glad I did it.)

 

Tester Observations:

CRUST: soft, bread crumb bottom, very thin

SAUCE: good, subtle flavor

CHEESE: fresh mozzarella

PEPPERONI: pulled off a pepperoni stick, thick, big, sausage-like, amazing
