El Cubilete Best Mexican Cuisine is a family Mexican restaurant. The family is from the state of Guanajuato, Mexico and has come all the way here to give Western New York the best Mexican food and drinks. The restaurant opened Dec. 7 2014. This is authentic Mexican food.
The name comes from a tall mountain-hill in Silao Municipality in the state of Guanajuato, Mexico. The mountains name is known as, “Cerro del Cubilete”. (In English, “Dice Cup Hill”). At the top of the hill is the “Cristo Rey” statue, or “Christ the King”. The Cerro del Cubilete is about 2,700 meters (8,900 ft) and is one of the most historically important religious shrines of Mexico. It marks the country’s geographical center. The current structure and base for the twenty-three meters (seventy-five ft) statue was created by artist Nicholas Mariscal in 1944 to honor the struggle of the Cristeros.
