Nothing sings spring like a good winery hop. One of our favs is Spring Lake Winery in Lockport. Not just because they have fine wine, but they also know how to have a good time. Remember the Murder Mystery train excursions we told you about last fall? Well they have some good cool events planned again for this year, and some new wines.
On the new wine front, just released this spring is Spring Lakes 2011 Merlot and Spring Lakes 2013 Cabernet. Merlot 2011 is a “delightful little Merlot with aromas of cinnamon and dried figs while your taste buds sizzle with flavors of clove and blackberry jam” says the Varallo family. The 2013 Cab “is rich but dry, red wine with aromas of fig and black cherries will find you early, finishing with a hint of Vanilla.”
Sips & Soups: Sunday March 13 & March 20
On the event front you can kick off the season with the Niagara Wine Trail’s Sips & Soups program running the next two Sundays. See a full list of participants here. Spring lake is pairing their white wines with Nana’s Chicken Soup, rich with shredded chicken and vegetables. Chicken pairs particularly well with their Riesling: Semi-dry, hand-picked, and cold fermented. Or try their Chardonnay – fruit forward but dry, notes of vanilla and almond. Stainless steel fermented. Soup seem a little odd paired with wine? Scroll to the bottom of this post to read more.

About Pairing Wine with Soup:
When it comes to pairing wine with soup pairing, think about the texture beyond being liquid: Soup is a very broad and diverse category comprising clear soups, smooth and creamy soups, chunky stews and chowders that all have very different textures. As well as texture, consider the soup’s ingredients, much like you would with a pasta sauce for example.
General tips for pairing wine with food:
Experiment – This is probably the most important tip. There is no ‘one’ perfect wine for any ‘one’ dish. So much will depend on your own (and your guests’) personal preferences, the occasion and of course your budget.
Don’t Panic – The chances are that whatever wine you choose will work fine with your soup. If not, just eat some bread or oyster crackers between each spoon of soup and sip of wine!
Have some Wine Ice Cream! & Nana Biscotti made with white wine and lemon.
Enjoy some of our wine ice cream by the Glass. Choose from: Red Raspberry Chardonnay, t, Port, Chocolate Cabernet! Must be 21 and over to enjoy. With a glass of wine in each pint of Ice cream!
