If you’re unfamiliar with Butter Block, allow me to introduce you. Buffalo’s own pop-up bakery, serves delicious sweet treats and savory bites like homemade Oreo cookies, ham and cheese croissants and brownies at a variety of spots around town.

The masterminds behind Butter Block are Colleen Stillwell, who has become well-known for crafting such delicious treats and Ginny Rose Stewart who is responsible for making your mouth water with her stunning imagery and fantastic marketing skills.  It’s because of Ginny’s photos of Colleen’s homemade pop tarts that I jumped in my car and headed to Public espresso on a whim, desperate to taste them myself.  Wow, am I glad I did.

As we walked through the doors of the Hotel Lafayette were greeted by the doorman who immediately inquired if we came in for the pop tarts too. Word seemed to have caught on fast about this childhood favorite turned elegant treat.  Standing in line, gazing into the display of desserts, I truly admired the presentation of each pastry.  You can really tell how much pride Colleen takes in seeing others enjoy every bite of her baked treats.  When it was our turn to order, we got 2 coffees, a brown sugar cinnamon pop tart, an original berry pop tart, and a homemade Oreo.  I bit into the dense pastry and the flavors were impeccable!  The buttery pastry, the sweet glaze holding the bright sprinkles in place and the fruity filling were a phenomenal combination.  I’ve also seen mention of even more flavors like blueberry lemon pop tarts and s’mores on social media, which I’m sure are just as incredible as the ones we tried. Regardless of the flavor, these pop tarts are incredibly satisfying. Pick one up any chance you get.
